This is a ground variety of nutmeg which is obtained by a thorough technique of grinding walnuts. Unlike the traditional Asian haute cuisine, in Europe its use in kitchen is used mostly for stews and poultry like chicken and turkey, although it is also used in the elaboration of sauces or masses.
